Leonardo DiCaprio Calvin J. Candie (June 6, 1821 - May 5, 1859) was the Francophile owner of the plantation Candyland and the initial main antagonist of Django Unchained. Calvin Candie is one of the villians in Django Unchained. He owns the fourth largest cotton plantation in Mississipi which he calls Candyland.

As part of my research into the global history of phrenology, I came across the real-life Calvin Candie. He was called Charles Caldwell, a doctor from Kentucky who revelled in both phrenology and slave ownership.
Dr Shultz was just so disgusted with Candies disregard for human life, and his callousness towards it, that finally, in the end, when Candie presses him for one more southern "lesson" in one upsmanship, he simply cannot take it anymore and simply shoots Candie in the heart.

The main location was the Evergreen Plantation in Edgard near New Orleans, used first for scenes early in the film where Django and Schultz track down the criminal Brittle Brothers. Later it also features as the nightmarish 'Candyland', a vast plantation run by the brutal Calvin Candie.
The answer is that Calvin Candie demanded a handshake to check if he had any weapons in his possession, that is why Schultz refused so many times to shake hands cuz they would kill them if Candie found his gun.
Schultz wouldn't just be making himself subservient to Candie by shaking his hand; he would be condoning his atrocities and becoming even more complicit in them than he was already.
